Recipe : Vegetarian Eho Roll Sushi

In Japanese calendar, February 3rd is called “Setsubun”. On Setsubun, Japanese prays for inviting “Fuku no Kami” the god of fortune, and driving out “Oni” the evil spirit from the house, by doing several cultural practices such as throwing soy beans and decorating holly leaves by the gate.

Eating “Eho Maki” (one kind of roll Sushi) is also one of those cultural practices.

The custom of eating Eho Maki was originally practiced only in Kansai (Western part of Japan mainly around Osaka), but it’s getting popular as just one of annual fun events all over Japan.

If you look around, you’ll see so many Sushi rolls are sold at neighbor supermarket. But in most cases, those rolls contain seafood products and eggs, so they can’t be vegetarian’s choice.

So, I tried to roll my own “Vegetarian Eho Maki”. Actually, I’ve been making this veg. roll since I came back in Japan, and getting quite good feedbacks, so I share the recipe.

<Vegetarian Eho Maki Roll>

(About 8〜9 rolls)

Ingredients:

“Sumeshi” (vinegar rice)

  • Rice(4.5cup)
  • Rice vinegar(5〜6TBS)
  • Sesame seeds (proper quantity)

Ingredients

  • “Nori” (laver) for roll(8-9sheets)
  • Avocado 1
  • Cucumber 1
  • Carrot 1(Boiled)
  • “Kanpyo” (dried gourd)
  • Any “Tsukemono” (Japanese pickles)(As you like)
  • “Umeboshi” (Dried plum pickles) (As you like)
  • Kimchi(As you like)

How to make:

Nothing is specially difficult except for vinegar rice.

  1. Spread the cooked rice on the large dish then add vinegar on it.
  2. Mix both rice and vinegar well.
  3. At the same time, fan the vinegar rice to decrease it’s heat and moisture.
  4. Spread sesame seeds and mix again.

Slice Sushi ingredients into long, thin size.

Since I wanted to make them “vegan”, I chose pickles and Kimchi that do not use fish broth. If you check carefully, you can choose vegan even in Japan.

This is “Ume-boshi Eho Maki”. Ume-boshi is my original which I make by myself every year.

When you try for the first time, you may feel it’s troublesome to prepare vinegar rice and slicing ingredients, it’ll be peaceful dining time for both vegetarians and non vegetarians by putting and rolling the ingredients they like.

When you bite, make sure to face “Eho” (the good direction). In 2015, face WSW.

Mind & Body are instruments, Breath is the player

Breathing in yoga & pilates practices maybe similar to playing the music instruments.

Through my own yoga & pilates practice, I get to believe like that.

From my experience, for example, let say, Wadaiko.

If you beat strong, it sounds strong, and if you beat weak, it sounds weak.

Winds and strings instruments maybe the same. The sound will vary depending on how players breath or control their body & mind.

Through the precise control of players’ body & mind, the sound varies very different.

That’s what I think the same as the breathing.

What our mind thinks, how our body moves, how our consciousness works… those things can be different depending on how we control the breath. 

When our breaths are shallow and unstable, we’ll be easily get angry.

When our breaths are stable and quiet, our concentration gets sharp.

When our breaths are rhythmic, our body moves rhythmic.

It maybe possible to say,

Mind & Body are instruments, Breath is the player

By deepening your understanding on breath through yoga & pilates practice, you can be Maestro of your own mind & body.

Pilates & Japanese drum performance

Both pilates & yoga, I always think about applying their body control and mind set to my daily lives as much as possible.

I recommend, and ask to my clients trying the same thing.

In my case, pilates & yoga seem very helpful for Iaido performance, Zen meditation and Thai Traditional Massage treatment.

This time, I tried to apply them to one funny thing.

It is… Wadaiko (Japanese drum).

Not only making the sound, showing the performance is also important in Japanese drum. And actually, it requires sensitive body awareness and control to make the sound and rhythm.

I tried to apply pilates basic principles and techniques when I was teaching local kids in my neighbor shrine.

Just like this.

It’s my pleasure if you found some similar movements from the following movies.

  • Flex and dynamic movement
  • Strong sound which comes from activating inner core muscles

By applying pilates, I felt those effects.

I think pilates gives us a great possibility. Probably, if we try, the theory and techniques of pilates could be applied to any physical and cultural activities. It will give you more than the weight loss, or good posture.

To be physically fit for both yoga & pilates

At the end of the private pilates lesson in the last weekend, one client told me the story she heard from her yoga teacher at the local sports club. She said,

“My yoga teacher told me that she cannot do pilates because exercises are too tough. Does it apply to other yoga teachers, too?”

Ah, yes. Yes, I was.

Probably, although it requires some practices at the beginning, if yogis or pilates practitioners cover essence of what they practice, they can easily do both yoga and pilates.

Now, even though I’m not perfect enough, I think I can switch yoga and pilates much easier than before. In the past, however, I wasn’t good at switching. In my case, when I was practicing pilates very hard, I couldn’t take yoga asanas very well.

Because of my experience, I understand that some people can do yoga but not pilates, or vice versa.

But at the same time, from my experience, I’m confident that if yogis practice yoga by focusing on its asana essence, and pilates practitioners focus on its basic principles, everybody can be physically fit for both yoga and pilates.

 What to focus on Pilates

As I told, when I was practicing pilates hard, my body was stiff, and I wasn’t good at taking yoga asanas.

It’s not pilate’s fault. The way I practice was wrong.

At that time, I was just imitating the exterior of each exercise, did not pay attention to local stabilizers and local mobilizers (inner muscles, in general). Such wrong movement made my body stiff.

After understanding which muscles to use for each exercises, I learned to get away from following the fancy exterior, took necessary modification to my condition, and finally got to be physically fit for doing yoga asanas.

What to focus on Yoga

Although this is nothing but the inference, if yogis try to do intermediate – advance pilates exercises, I suppose they should practice yoga with the focus on,

  1. Breathing
  2. Alignment
  3. Coordination of breath and motion(for Flow or Vinyasa especially)

If they breath out properly with Ujay breathing, they can easily perform inner muscles in pilates exercises. Alignment, Coordination of breath and motion are equally required in pilates exercises.

And as well, we have better to take away from focusing on the fancy exterior of each yoga asanas.

 Ideally, it’s better to be fit for both Yoga & Pilates

Some people say “I cannot tell the difference between yoga and pilates”, and some people say “yoga and pilates are totally different!!!” after experiencing by themselves.

Personally, I think both yoga and pilates share the same root. Only the purpose is the different. And from the difference of the purpose, the characteristics got to be different.

If we divide them  Yin & Yang, it can probably be put yoga as “Yin”, and pilates as “Yang”. But if we keep focusing on the essence above, they finally get together.

So, ideally, it’s better to be fit for both yoga & pilates.

If you are practicing either yoga or pilates, I recommend experiencing the other.

It will lead your body to the higher level of balance and condition.
